Crispy Smashed Garlic Potatoes

1.5 lbs baby Yukon gold potatoes

4 cloves garlic, minced

1/4 cup olive oil

1 teaspoon sea salt

1/2 teaspoon black pepper

1 teaspoon smoked paprika (or regular paprika)

3 tablespoons fresh parsley, chopped (optional for garnish)

1 tablespoon fresh rosemary, finely chopped (optional for extra flavor)

Zest of 1 lemon (optional, for brightness)

Instructions
 

Boil the Potatoes: In a large pot, add baby Yukon gold potatoes and cover them with water. Bring to a boil over medium-high heat and add a generous pinch of salt. Cook for 15-20 minutes, or until the potatoes are fork-tender. Drain and let cool slightly.

    Prepare for Smashed Potatoes: Preheat your oven to 450°F (230°C) and line a large baking sheet with parchment paper for easy cleanup.

      Smash the Potatoes: Once the potatoes are cool enough to handle, place each potato on the prepared baking sheet. Using the bottom of a glass or a potato masher, gently press down on each potato until it’s flattened but not completely disintegrated.

        Seasoning Mix: In a small bowl, combine the minced garlic, olive oil, sea salt, black pepper, and smoked paprika. Mix well to form a fragrant garlic-infused oil.
