1 lb (450g) boneless, skinless chicken thighs, diced

1/2 cup cornstarch

1/4 cup sesame oil

1/4 cup soy sauce (low sodium preferred)

2 tablespoons honey

2 tablespoons rice vinegar

1 tablespoon fresh ginger, minced

2 cloves garlic, minced

1/2 teaspoon red pepper flakes (optional)

1/4 cup green onions, chopped

1 tablespoon sesame seeds, toasted

1 head of butter lettuce (or your favorite lettuce), leaves separated

Fresh cilantro, for garnish

Salt and pepper, to taste

Instructions
 

Prepare the Chicken: In a bowl, season the diced chicken thighs with salt and pepper. Toss the pieces with cornstarch until well coated.

    Make the Sauce: In a small saucepan over medium heat, combine sesame oil, soy sauce, honey, rice vinegar, minced ginger, garlic, and red pepper flakes. Whisk until well blended. Allow it to simmer for about 5 minutes until slightly thickened. Remove from heat and set aside.

      Cook the Chicken: In a large skillet over medium-high heat, add a little more sesame oil if necessary. Once hot, add the coated chicken pieces in a single layer. Cook for about 6-8 minutes, stirring occasionally, until golden brown and crispy. Ensure the chicken is cooked through (internal temperature should reach 165°F/74°C).

        Combine: Once the chicken is cooked, reduce the heat to low and pour half of the prepared sauce over the chicken, stirring to coat evenly. Let it cook for another 1-2 minutes, allowing the chicken to absorb the flavors.

          Assemble the Wraps: On a plate, lay out the butter lettuce leaves. Spoon a portion of the crispy chicken into each leaf, drizzle with additional sauce, and sprinkle with chopped green onions and toasted sesame seeds.
