1 lb (450g) medium to large carrots, peeled and cut into fry shapes

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

½ teaspoon onion powder

½ teaspoon ground cumin

Salt and black pepper to taste

Fresh parsley, chopped (for garnish)

Optional: ¼ teaspoon cayenne pepper for heat

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper for easy cleanup.

    Prepare the Carrots: Peel the carrots and cut them into fry shapes, about 1/4 inch thick. Make sure they are evenly sized to ensure even cooking.

      Season the Carrots: In a large mixing bowl, combine the carrot fries with olive oil, garlic powder, smoked paprika, onion powder, ground cumin, salt, and black pepper. If you’re using cayenne pepper for a kick, add that now. Toss until the carrots are well-coated in the oil and spices.

        Arrange on Baking Sheet: Spread the seasoned carrot fries out in a single layer on the prepared baking sheet. Avoid overcrowding to ensure they roast evenly and become crispy.

          Roast in the Oven: Roast the carrots in the preheated oven for about 25-30 minutes or until they are golden brown and crispy on the edges. Toss them halfway through cooking to promote even browning.

            Garnish and Serve: Once roasted, remove from the oven and let them cool for a couple of minutes. Sprinkle with freshly chopped parsley for a touch of freshness.
