Crispy Rice Paper Spring Rolls

10 sheets rice paper (medium size)

1 cup vermicelli noodles, cooked

1 cup shredded carrots

1 cup cucumber, julienned

1 cup red bell pepper, thinly sliced

1 cup fresh cilantro leaves

1 cup mint leaves

1 cup cooked shrimp or tofu (optional, for a protein boost)

1 tablespoon soy sauce

1 tablespoon sesame oil

1 avocado, sliced

Sweet chili sauce or peanut sauce, for dipping

Prep the Noodles and Veggies: If not done yet, cook the vermicelli noodles according to the package instructions. Drain and set aside. Prepare all your vegetables: shred the carrots, julienne the cucumber, and thinly slice the bell pepper.

    Soften the Rice Paper: Fill a large shallow dish or plate with warm water. Dip one rice paper sheet into the water for about 10-15 seconds until it becomes soft and pliable. Carefully remove it and lay it flat on a clean cutting board or work surface. Repeat this with additional sheets as needed.

      Layer Ingredients: In the lower third of the rice paper sheet, start layering your fillings. Place a small amount of vermicelli noodles, followed by a small handful of shredded carrots, cucumber, red bell pepper, and a few leaves of cilantro and mint. If using, add a piece or two of shrimp or tofu, and a couple of slices of avocado.

        Roll the Spring Roll: Starting from the bottom, carefully fold the rice paper over the filling. Tuck in the sides gently as you roll tightly upward to enclose the filling. Make sure to keep the roll snug, but not too tight to prevent tearing.

          Repeat: Continue the process with the remaining rice paper sheets and filling ingredients until all are prepared.

            Serve: Arrange the spring rolls on a platter. Serve with sweet chili sauce or peanut sauce on the side for dipping.
