2 medium zucchini, cut into wedges

1 cup all-purpose flour

2 large eggs, beaten

1 cup breadcrumbs (preferably panko for extra crunch)

½ cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon dried oregano

Salt and pepper, to taste

Olive oil spray or cooking spray

Fresh parsley, chopped (for garnish, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper for easy cleanup.

    Prepare the Dipping Stations: In three separate bowls, set up a dredging station:

      - Flour Mixture: In the first bowl, mix the flour with a pinch of salt and pepper.

        - Egg Wash: In the second bowl, beat the eggs until well combined.

          - Breadcrumb Mixture: In the third bowl, combine the breadcrumbs, grated Parmesan, garlic powder, onion powder, dried oregano, and a bit of salt and pepper.

            Coat the Zucchini Wedges: Take each zucchini wedge and first coat it in the flour mixture, shaking off any excess. Then, dip it into the egg wash, and finally, press it into the breadcrumb mixture until fully coated. Place the breaded zucchini wedges on the prepared baking sheet.
