Ingredients

4 salmon fillets (6 oz each)

2 tablespoons olive oil

2 lemons (1 for juice and zest, 1 sliced for garnish)

3 cloves garlic, minced

1 tablespoon fresh parsley, chopped

1 tablespoon fresh dill, chopped

1 tablespoon fresh thyme, chopped

1 teaspoon sea salt

1 teaspoon black pepper

½ teaspoon paprika

¼ teaspoon red pepper flakes (optional)

1 tablespoon panko breadcrumbs

Lemon wedges (for serving)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it.

Prepare the Marinade: In a small bowl, combine olive oil, juice and zest of 1 lemon, minced garlic, parsley, dill, thyme, sea salt, black pepper, paprika, and red pepper flakes. Mix well to create a marinade.

Marinate the Salmon: Place the salmon fillets on the prepared baking sheet. Pour the marinade over the fillets, ensuring they are evenly coated. Let them marinate for at least 15 minutes (for best results, marinate for 30 minutes).

Add Breadcrumbs: After marinating, sprinkle the panko breadcrumbs evenly over the top of each salmon fillet. This will help create a crispy topping.

Bake the Salmon: Bake in the preheated oven for 12-15 minutes or until the salmon flakes easily with a fork and is cooked through. The breadcrumbs should be golden and crispy.

Garnish and Serve: Remove the salmon from the oven and let it rest for a couple of minutes. Garnish with lemon slices and additional fresh herbs if desired. Serve with lemon wedges on the side.
