2 pounds baby potatoes, halved

4 tablespoons olive oil

4 cloves garlic, minced

Zest of 1 large lemon

2 tablespoons fresh lemon juice

1 teaspoon dried oregano

1 teaspoon paprika

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Potatoes: Place the halved baby potatoes in a large mixing bowl. Add olive oil, minced garlic, lemon zest, lemon juice, dried oregano, paprika, salt, and pepper. Toss everything together until the potatoes are well-coated.
