Ingredients

1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

½ teaspoon salt

¼ teaspoon black pepper

Zest of 1 lemon

2 tablespoons grated Parmesan cheese

1 tablespoon fresh lemon juice

1 tablespoon chopped fresh parsley (for garnish)

Instructions

Preheat the Oven: Start by preheating your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

Prepare Chickpeas: After draining and rinsing the chickpeas, pat them dry with a clean kitchen towel. Removing excess moisture is key to achieving crispiness.

Season the Chickpeas: In a mixing bowl, combine the chickpeas with olive oil, garlic powder, onion powder, smoked paprika, salt, black pepper, and lemon zest. Toss everything together until the chickpeas are evenly coated with the seasoning.

Bake the Chickpeas: Spread the seasoned chickpeas in a single layer on the prepared baking sheet. Bake for 25-30 minutes, stirring halfway through, until they are golden brown and crispy.

Add Parmesan: Remove the chickpeas from the oven and immediately sprinkle with grated Parmesan cheese. Return to the oven for an additional 5 minutes until the cheese melts slightly but remains flavorful.

Finish with Lemon Juice: Once out of the oven, drizzle the chickpeas with fresh lemon juice, toss gently to coat, and allow them to cool for a couple of minutes.

Serve: Garnish with chopped parsley, and serve these crispy delights warm or at room temperature for a delicious snack or salad topping.
