Ingredients
  

1 large eggplant, sliced into 1/2-inch thick rounds

1 cup all-purpose flour

2 large eggs

1 cup breadcrumbs (preferably panko for extra crispiness)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

Olive oil, for frying

4 slices of your favorite bread (e.g., sourdough, whole wheat)

1 cup fresh spinach leaves

1 medium tomato, sliced

1/2 avocado, sliced

Your choice of condiment (e.g., mayonnaise, hummus, or a spicy aioli)

Instructions
 

Prepare the Eggplant:

    - Sprinkle salt on both sides of the eggplant slices and let them rest for about 30 minutes. This helps to draw out excess moisture and bitterness. Rinse and pat dry.

      Set Up the Breading Station:

        - In one shallow bowl, place the flour and season with salt, pepper, and half of the garlic and onion powder.

          - In a second bowl, beat the eggs.

            - In a third bowl, combine the breadcrumbs with the remaining garlic powder, onion powder, and smoked paprika.

              Bread the Eggplant:

                - Dredge each eggplant slice in flour, shaking off excess.

                  - Dip it into the beaten eggs, ensuring it's well-coated.

                    - Finally, press the slice into the breadcrumb mixture, coating both sides well.

                      Fry the Eggplant:

                        - In a large skillet, heat about 1/4 inch of olive oil over medium heat.

                          - Once hot, carefully add the breaded eggplant slices in a single layer.

                            - Fry for about 3-4 minutes on each side or until golden brown and crispy.

                              - Transfer to a paper towel-lined plate to absorb excess oil. Repeat for all slices.

                                Assemble the Sandwich:

                                  - Toast the bread slices until golden and crispy.

                                    - Spread your chosen condiment on one side of each slice of bread.

                                      - Layer fresh spinach, a few slices of crispy eggplant, tomato slices, and avocado. Top with another slice of bread to complete the sandwich.

                                        Serve and Enjoy:

                                          - Cut the sandwiches in half and serve immediately while the eggplant is still warm and crispy.
