Ingredients

1 cup cottage cheese

1/2 cup all-purpose flour

1/2 teaspoon baking powder

1 teaspoon garlic powder

1 teaspoon onion powder

1/4 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup breadcrumbs (panko for extra crunch)

1/4 cup grated Parmesan cheese

1 egg, beaten

Oil for frying (vegetable or canola, as needed)

Fresh parsley for garnish (optional)

Instructions

Prepare the Mixture: In a mixing bowl, combine the cottage cheese, all-purpose flour, baking powder, garlic powder, onion powder, smoked paprika, salt, and black pepper. Mix until well blended. The mixture should be moist but hold its shape.

Form the Bites: Using your hands, scoop out small portions (about a tablespoon) of the mixture and gently form them into balls or patties, pressing them slightly to ensure they hold together.

Coat the Treats: In one bowl, place the beaten egg. In another shallow dish, combine the breadcrumbs and grated Parmesan cheese. Dip each cottage cheese ball first in the egg, allowing excess to drip off, then roll in the breadcrumb mixture until fully coated.

Heat the Oil: In a deep skillet or frying pan, heat about an inch of oil over medium heat. The oil is ready when a small amount of batter sizzles upon contact.

Fry the Treats: Carefully add a few of the coated cottage cheese bites to the hot oil, making sure not to overcrowd the pan. Fry for 3-4 minutes per side or until golden brown and crispy. Use a slotted spoon to remove them from the oil and place them on a paper towel-lined plate to drain excess oil.

Garnish and Serve: Once all the treats are fried, sprinkle with fresh parsley if desired. Serve warm with your favorite dipping sauce, such as marinara, tzatziki, or a spicy aioli.
