Ingredients

1 lb chicken breast, sliced into strips

1 cup buttermilk

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

½ teaspoon cayenne pepper

1 teaspoon salt

½ teaspoon black pepper

1 cup all-purpose flour

1 cup panko breadcrumbs

Vegetable oil (for frying)

Instructions

Marinate the Chicken: In a medium bowl, combine the buttermilk, garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and black pepper. Add the chicken strips, ensuring they are fully submerged. Cover and refrigerate for at least 1 hour (or overnight for best results).

Prepare the Breading Station: Set up a station with three shallow bowls. In the first bowl, add the all-purpose flour. In the second bowl, pour in the marinated chicken along with some of the buttermilk mixture. In the third bowl, place the panko breadcrumbs.

Bread the Chicken: Take a piece of marinated chicken and let the excess buttermilk drip off. Dredge it in the flour, making sure it’s fully coated, then dip it back into the buttermilk, and finally roll it in the panko breadcrumbs, pressing gently to adhere. Place the breaded chicken on a plate and repeat with the remaining strips.

Heat the Oil: In a large skillet or deep fryer, add enough vegetable oil to submerge the chicken tenders halfway (about 1 inch deep). Heat the oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping in a small piece of bread; it should sizzle immediately.

Fry the Chicken Tenders: Carefully place the breaded chicken tenders in the hot oil, working in batches to avoid overcrowding. Fry for about 4-5 minutes on each side or until golden brown and cooked through (internal temperature should reach 165°F/74°C). Use a slotted spoon to transfer them to a paper towel-lined plate to drain excess oil.

Serve and Enjoy: Serve the crispy chicken tenders hot with your favorite dipping sauces like honey mustard, ranch, or barbecue sauce!
