Crispy Chicken Taco Bites

1 pound ground chicken

1 cup crushed tortilla chips

1/2 cup shredded cheddar cheese

1/2 cup black beans, drained and rinsed

1/4 cup diced onions

2 cloves garlic, minced

1 tablespoon taco seasoning

1/2 teaspoon cumin

1/2 teaspoon paprika

Salt and pepper to taste

1/4 cup fresh cilantro, chopped (for garnish)

Sour cream (for serving)

Salsa (for serving)

Mini taco shells (or small tortillas)

Instructions
 

Preheat the Oven: Start by preheating your oven to 400°F (200°C) and lining a baking sheet with parchment paper.

    Cook the Chicken: In a skillet over medium heat, add a drizzle of olive oil. Once hot, add minced garlic and diced onions, sautéing until translucent (about 2-3 minutes). Then, add the ground chicken, breaking it up with a spatula. Cook until browned and cooked through, about 7-10 minutes.

      Season the Mixture: Once the chicken is cooked, add the taco seasoning, cumin, paprika, salt, and pepper. Stir to combine, cooking for an additional minute to let the spices meld into the meat.

        Mix in the Fillings: Remove the skillet from heat. Add the crushed tortilla chips, shredded cheddar cheese, and black beans to the chicken. Stir until everything is evenly mixed.

          Fill the Taco Shells: Spoon about a tablespoon of the chicken mixture into each mini taco shell, filling them generously.

            Bake the Taco Bites: Arrange the filled mini tacos on the prepared baking sheet. Bake in the preheated oven for about 10-12 minutes, or until the shells are crispy and the cheese is melted.

              Garnish and Serve: Once baked, remove from the oven. Garnish with fresh cilantro and serve warm with sour cream and salsa on the side.
