2 large chicken breasts, boneless and skinless

1 cup buttermilk

1 cup all-purpose flour

1 cup panko breadcrumbs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

½ teaspoon salt

½ teaspoon black pepper

Cooking oil (for frying)

4 large flour tortillas

1 cup shredded lettuce

1 cup diced tomatoes

½ cup ranch dressing

1 cup shredded cheese (cheddar or your choice)

Optional: sliced jalapeños or avocado

Instructions
 

Marinate the Chicken: In a bowl, soak the chicken breasts in buttermilk for at least 30 minutes. This will help tenderize the chicken and add moisture.

    Prepare the Breading: While the chicken is marinating, set up a breading station. In one shallow dish, combine the flour, garlic powder, onion powder, paprika, salt, and pepper. Place the panko breadcrumbs in another shallow dish.

      Bread the Chicken: Remove the chicken from the buttermilk, allowing excess to drip off. Dredge each breast in the seasoned flour, shaking off excess, then dip again in the buttermilk, and finally coat with panko breadcrumbs, pressing gently to adhere.

        Fry the Chicken: In a large skillet, heat about 1/2 inch of cooking oil over medium-high heat. Once hot, carefully add the breaded chicken breasts. Fry for about 5-7 minutes per side or until golden brown and cooked through. An internal temperature of 165°F (75°C) is ideal. Remove and place on a plate lined with paper towels to absorb excess oil.

          Prepare the Wraps: Lay out the flour tortillas on a clean surface. Spread a generous drizzle of ranch dressing across the center of each tortilla.

            Assemble the Wraps: Slice the crispy chicken into strips and place a few strips on top of the ranch dressing on each tortilla. Top with shredded lettuce, diced tomatoes, and shredded cheese. If desired, add sliced jalapeños or avocado for an extra kick.
