Crispy Chicken Caesar Tacos

1 lb boneless, skinless chicken thighs

1 cup buttermilk

1 cup all-purpose flour

1 tsp garlic powder

1 tsp onion powder

1 tsp paprika

1/2 tsp cayenne pepper (optional, for heat)

Salt and pepper to taste

8 small corn tortillas

2 cups romaine lettuce, chopped

1/2 cup Caesar dressing

1/2 cup Parmesan cheese, grated

Fresh parsley, chopped (for garnish)

1 lemon, cut into wedges (for serving)

Instructions
 

Marinate the Chicken: In a medium bowl, combine the buttermilk, garlic powder, onion powder, paprika, cayenne pepper, salt, and pepper. Add the chicken thighs, ensuring they are fully submerged. Cover and refrigerate for at least 1 hour (or overnight for more flavor).

    Prepare the Coating: In a shallow dish, mix the flour, garlic powder, onion powder, paprika, cayenne pepper, and a pinch of salt and pepper.

      Dredge the Chicken: After marinating, remove the chicken from the buttermilk, allowing the excess to drip off. Dredge the chicken in the flour mixture, pressing lightly to ensure an even coating.

        Fry the Chicken: In a large skillet, heat about 1/2 inch of oil over medium-high heat. Once the oil is hot (350°F), add the chicken in batches, making sure not to overcrowd the pan. Fry for 4-5 minutes on each side, or until golden brown and cooked through. Remove and let drain on paper towels.
