Crispy Cheddar Zucchini Rounds

2 medium zucchinis, sliced into ½-inch rounds

1 cup shredded sharp cheddar cheese

1 cup panko breadcrumbs

½ cup all-purpose flour

2 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon paprika

½ teaspoon salt

¼ teaspoon black pepper

Cooking spray or olive oil for drizzling

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper for easy cleanup.

    Prepare the Zucchini: Pat the sliced zucchini rounds dry with paper towels to remove excess moisture. This will help them get crispy.

      Set Up the Breading Station:

        - In one bowl, place the all-purpose flour.

          - In a second bowl, whisk the two eggs.

            - In a third bowl, mix together the panko breadcrumbs, shredded cheddar cheese, garlic powder, onion powder, paprika, salt, and black pepper.

              Coat the Zucchini:

                - Take each zucchini round and first dredge it in the flour, shaking off the excess.

                  - Next, dip it into the whisked eggs, ensuring it’s fully coated.

                    - Finally, press it into the breadcrumb and cheese mixture, coating it thoroughly. Place the coated zucchini round on the prepared baking sheet.

                      Spray or Drizzle: Lightly spray or drizzle the tops of the zucchini rounds with cooking spray or olive oil. This helps them to get extra crispy while baking.

                        Bake: Bake in the preheated oven for about 20-25 minutes, flipping halfway through, until the rounds are golden brown and crispy.

                          Serve: Once baked, remove the zucchini rounds from the oven and let them cool slightly. Serve warm with your choice of dipping sauces, such as ranch, marinara, or a spicy mayo.
