Ingredients

4 large ears of fresh corn

2 tablespoons olive oil

2 teaspoons smoked paprika

1 teaspoon cayenne pepper (adjust for heat preference)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried thyme

1 teaspoon dried oregano

1 teaspoon salt

½ teaspoon black pepper

¼ cup grated Parmesan cheese (optional)

Fresh parsley, chopped (for garnish)

Lime wedges (for serving)

Instructions

Prep the Corn: Using a sharp knife, carefully cut the corn into quarters, creating riblet shapes. You should have about 12 riblets from 4 ears of corn.

Season the Corn: In a large bowl, combine the olive oil, smoked paprika, cayenne pepper, garlic powder, onion powder, dried thyme, dried oregano, salt, and black pepper. Mix well to form a marinade.

Coat the Riblets: Add the corn riblets to the bowl with the marinade. Toss well to ensure each riblet is evenly coated.

Preheat the Oven or Air Fryer: If baking, preheat your oven to 425°F (220°C). If using an air fryer, preheat it to 400°F (200°C).

          Bake or Air Fry:

            - For Oven: Line a baking sheet with parchment paper. Spread the seasoned riblets in a single layer, ensuring they aren’t crowded. Bake for 20-25 minutes, flipping halfway through, until they are golden and crispy.

              - For Air Fryer: Place the riblets in the basket in a single layer (you may need to do this in batches). Cook for about 15 minutes, shaking the basket halfway through to ensure even cooking.

Add Cheese (Optional): If using Parmesan cheese, sprinkle it over the corn riblets during the last 5 minutes of cooking in the oven or air fryer.

Serve: Once crispy and golden, remove the riblets from the oven or air fryer. Garnish with fresh parsley and serve with lime wedges on the side for a zesty kick.

Enjoy: Serve these delicious Cajun corn riblets as a side dish, snack, or appetizer at your next gathering!
