Crispy Cabbage and Carrot Fritters

2 cups green cabbage, finely shredded

1 cup carrots, grated

1 small onion, finely chopped

2 cloves garlic, minced

1/2 cup all-purpose flour (or chickpea flour for gluten-free)

2 large eggs

1 tsp ground cumin

1 tsp paprika

1/2 tsp baking powder

Salt and pepper, to taste

1/4 cup fresh parsley, chopped

Oil, for frying (such as olive or vegetable oil)

Instructions
 

Prepare the Vegetables: In a large mixing bowl, combine the finely shredded cabbage, grated carrots, chopped onion, and minced garlic. Mix well to distribute the ingredients evenly.

    Season and Bind: Add the ground cumin, paprika, salt, pepper, and chopped parsley to the vegetable mixture. Stir until combined. Then, add the flour and baking powder, mixing well to ensure the vegetables are coated.

      Add Eggs: Crack the eggs into the mixture and stir until everything is well combined and forms a thick batter.

        Heat Oil: In a large frying pan, pour enough oil to cover the bottom (about 1/4 inch deep) and heat over medium-high heat. You can test if the oil is hot enough by dropping a small amount of batter into the oil; it should sizzle immediately.

          Fry Fritters: Using a tablespoon, scoop out a portion of the batter and carefully drop it into the hot oil, flattening it slightly with the back of the spoon. Cook in batches, ensuring not to overcrowd the pan.
