Crispy Black Bean Taquitos

1 can (15 oz) black beans, drained and rinsed

1 cup corn (frozen, fresh, or canned)

1 teaspoon ground cumin

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

Salt and pepper to taste

1 cup shredded cheese (cheddar or Mexican blend)

8-10 corn tortillas

2 tablespoons olive oil (for frying)

Fresh cilantro, chopped (for garnish)

Avocado slices (for serving)

Salsa or sour cream (for serving)

Instructions
 

Prepare the Filling: In a mixing bowl, mash the black beans with a fork or potato masher until mostly smooth, leaving some texture. Stir in the corn, cumin, garlic powder, onion powder, smoked paprika, salt, pepper, and half of the cheese until well combined.

    Warm the Tortillas: Heat the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side until they are pliable. (Alternatively, wrap them in a damp paper towel and microwave for 30-45 seconds.)

      Assemble the Taquitos: Take a warm tortilla and place a generous spoonful of the black bean filling towards one end of the tortilla. Sprinkle with a little more cheese, then tightly roll the tortilla around the filling. Repeat with the remaining tortillas and filling.

        Fry the Taquitos: In a large skillet, heat the olive oil over medium-high heat. Once hot, carefully place 3-4 taquitos seam-side down in the oil. Fry for about 3-4 minutes on each side, or until golden brown and crispy. Remove and drain on paper towels.

          Serve: Place the crispy taquitos on a platter, garnish with chopped cilantro, and serve with avocado slices, salsa, or sour cream on the side.
