Crispy BBQ Chicken Lettuce Wraps

1 lb boneless, skinless chicken thighs, diced

1 cup barbecue sauce (your choice, sweet or spicy)

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

Salt and pepper to taste

1 head of butter lettuce or romaine (for wraps)

½ cup shredded carrots

½ cup diced red bell pepper

¼ cup chopped green onions (for garnish)

¼ cup fresh cilantro leaves (optional, for garnish)

Instructions
 

Marinate the Chicken: In a mixing bowl, combine the diced chicken thighs, olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Add half of the barbecue sauce, mix well, and let it marinate for at least 30 minutes in the refrigerator.

    Cook the Chicken: Heat a large skillet over medium-high heat. Once hot, add the marinated chicken to the skillet and cook for about 7-10 minutes, stirring occasionally until the chicken is crispy and cooked through. If you prefer extra crispiness, you can increase the heat slightly towards the end of cooking.

      Add More Flavor: Once the chicken is cooked, pour in the remaining barbecue sauce and toss well until all the chicken is nicely coated. Cook for an additional 2 minutes to heat through, then remove from heat.

        Prepare the Lettuce Wraps: Carefully separate the lettuce leaves from the head, trying to keep them whole for wrapping. Rinse and dry them gently with a paper towel.

          Assemble the Wraps: To assemble, take a lettuce leaf and add a few spoonfuls of the crispy BBQ chicken mixture. Top it with shredded carrots, diced red bell pepper, and a sprinkle of chopped green onions and cilantro, if using.

            Serve and Enjoy: Repeat the assembly for all leaves, then serve the wraps immediately. These wraps can be accompanied by extra barbecue sauce for dipping if desired.
