2 medium zucchinis

1 cup breadcrumbs (panko for extra crunch recommended)

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

1/2 teaspoon salt

1/4 teaspoon black pepper

2 large eggs

1 cup flour (for dredging)

Cooking spray or olive oil spray

Optional: marinara sauce or ranch dressing for dipping

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy clean-up.

    Prepare the Zucchini: Wash and trim the ends off the zucchinis. Cut them into fries (about 1/4 to 1/2 inch thick) to ensure even cooking.

      Set Up the Dredging Station: In three separate shallow dishes, place the flour, whisked eggs, and a mixture of breadcrumbs, Parmesan cheese, garlic powder, onion powder, oregano, salt, and pepper.

        Dredging Process:

          - First, take a zucchini fry and coat it in flour, shaking off the excess.

            - Next, dip it into the whisked eggs, allowing any excess egg to drip off.

              - Finally, roll the fry in the breadcrumb mixture, pressing gently to ensure it sticks. Repeat this process for all zucchini fries.

                Arrange on Baking Sheet: Place the coated zucchini fries on the prepared baking sheet. Make sure they are in a single layer and not touching, for even crispiness.

                  Spray with Oil: Lightly spray the tops of the zucchini fries with cooking spray or olive oil spray to enhance crispiness.

                    Bake: Bake in the preheated oven for 20-25 minutes, flipping them halfway through, until golden brown and crispy.

                      Serve: Remove from the oven and let them cool for a few minutes. Serve hot with your choice of marinara sauce or ranch dressing for dipping.
