2 medium zucchini

½ cup breadcrumbs (preferably panko for extra crunch)

¼ cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

½ teaspoon salt

¼ teaspoon black pepper

2 large eggs

1 tablespoon olive oil

Preheat the Oven: Begin by preheating your oven to 225°F (110°C). This low temperature will help dehydrate the zucchini while achieving crispiness.

    Prepare the Zucchini: Wash and dry the zucchini. Cut off both ends and slice them into thin rounds, about ¼ inch thick. If desired, you can also slice them into thin sticks for a different shape.

      Season the Zucchini: Place the zucchini slices in a bowl and sprinkle with salt. Let them sit for about 10-15 minutes to draw out moisture. After this time, pat them dry with paper towels to remove excess moisture.

        Prepare the Breading Station: In one bowl, whisk the eggs. In another bowl, combine the breadcrumbs, Parmesan cheese, garlic powder, onion powder, smoked paprika, black pepper, and a drizzle of olive oil. Mix well until the breadcrumbs are evenly coated.

          Coat the Zucchini: Dip each zucchini slice into the egg mixture, allowing any excess to drip off, then transfer it to the breadcrumb mixture. Press gently to adhere the breadcrumbs to the zucchini. Place each coated slice on a parchment-lined baking sheet.

            Bake the Zucchini Chips: Once all the zucchini slices are coated, spray them lightly with cooking spray to enhance crispiness if desired. Bake in the preheated oven for about 1.5 to 2 hours, flipping once halfway through. Keep a close eye on them in the last 30 minutes to ensure they don’t burn, as oven temperatures can vary.

              Cool and Serve: Once they are golden brown and crispy, remove the chips from the oven and let them cool for a few minutes on the baking sheet. Serve warm or at room temperature as a delicious snack or side dish!
