14 oz firm tofu, pressed and cubed

2 tablespoons cornstarch

2 tablespoons vegetable oil

1 tablespoon soy sauce

1 tablespoon sesame oil

1 bell pepper, thinly sliced (any color)

1 medium carrot, julienned

1 cup snap peas, trimmed

3 green onions, sliced

2 cloves garlic, minced

1 tablespoon ginger, minced

1 tablespoon rice vinegar

2 tablespoons hoisin sauce

Salt and pepper to taste

4 large lettuce leaves (e.g., romaine or butter lettuce)

Optional: sesame seeds and sriracha for serving

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

    Prepare the Tofu: Start by pressing the tofu for at least 15 minutes to remove excess moisture. Once pressed, cut the tofu into bite-sized cubes and place them in a bowl.

      Coat the Tofu: In the bowl with the cubed tofu, sprinkle the cornstarch and toss gently to coat each piece evenly. This will help achieve that crispy texture when baked.

        Bake the Tofu: Spread the coated tofu evenly on the prepared baking sheet. Drizzle with vegetable oil. Bake in the preheated oven for 25-30 minutes, flipping halfway through, until golden and crispy.

          Stir-fry the Vegetables: While the tofu is baking, heat sesame oil in a large skillet or wok over medium-high heat. Add minced garlic and ginger, sauté for about 30 seconds until fragrant.

            Add the Vegetables: Stir in the bell pepper, carrot, and snap peas. Sauté for 4-5 minutes until the veggies are tender yet still crisp.

              Flavor it Up: Once the vegetables are cooked, add the baked tofu to the skillet. Pour in the soy sauce, rice vinegar, and hoisin sauce. Stir well to combine and heat everything through for about 2-3 minutes. Taste and adjust seasoning with salt and pepper as necessary.

                Assemble the Wraps: Take a large lettuce leaf and add a generous scoop of the stir-fry mixture in the center. Sprinkle with sliced green onions and optional sesame seeds. If desired, drizzle with sriracha for an extra kick.

                  Serve: Roll up the lettuce to create a wrap and enjoy immediately!
