8 oz fresh mozzarella cheese, sliced into ½-inch rounds

1 cup all-purpose flour

2 large eggs

1 cup panko breadcrumbs

½ cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon dried Italian herbs (oregano, basil, thyme)

Salt and pepper to taste

Cooking spray or olive oil spray

Marinara sauce, for dipping (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    Prepare the Dredging Stations: Set up three bowls for the breading process:

      - In the first bowl, place the all-purpose flour and season it lightly with salt and pepper.

        - In the second bowl, whisk the eggs until well beaten.

          - In the third bowl, combine the panko breadcrumbs, grated Parmesan cheese, garlic powder, Italian herbs, and a pinch of salt and pepper.

            Bread the Mozzarella Rounds: Take each mozzarella round and dredge it in the flour until fully coated. Shake off any excess flour. Next, dip it into the beaten eggs, making sure it’s completely covered. Finally, roll it in the panko mixture, pressing gently to adhere. Place the breaded rounds on the prepared baking sheet.

              Spray and Bake: Once all the mozzarella rounds are breaded, lightly spray the tops with cooking spray or olive oil to promote crispiness. Bake in the preheated oven for 12-15 minutes, flipping halfway through, until the rounds are golden brown and crispy.

                Serve and Enjoy: Remove the mozzarella rounds from the oven and let them cool for a minute. Serve them warm with marinara sauce for dipping.
