Crescent Rolls Cheesecake

2 cans (8 oz each) refrigerated crescent roll dough

16 oz cream cheese, softened

1 cup granulated sugar

1 tsp vanilla extract

2 large eggs

1 cup sour cream

1/4 cup flour

1 tbsp lemon juice

1/4 cup powdered sugar (for dusting, optional)

Fresh berries (strawberries, blueberries, or raspberries for topping, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Lightly grease a 9x13 inch baking dish.

    Prepare the Base: Open the crescent roll dough and unroll one package. Lay it flat in the bottom of the baking dish, pressing the seams to seal and create a single layer.

      Make the Cheesecake Filling:

        - In a large mixing bowl, use an electric mixer to beat the softened cream cheese until smooth.

          - Gradually add the granulated sugar and continue to mix until well combined.

            - Add the vanilla extract, and mix again.

              - Beat in the eggs one at a time, ensuring each egg is fully incorporated before adding the next.

                - Mix in the sour cream, flour, and lemon juice until the mixture is smooth and creamy.

                  Assemble the Cheesecake: Pour the cheesecake filling over the crescent roll base in the baking dish, spreading it evenly.

                    Top with Crescents: Open the second package of crescent roll dough and layer it over the cheesecake filling. You can either place whole triangles or cut them into smaller pieces to evenly distribute over the filling.

                      Bake: Place the baking dish in the preheated oven and bake for about 25-30 minutes, or until the top is golden brown and the cheesecake is set.

                        Cool and Chill: Once baked, remove from the oven and let it cool at room temperature for about 1 hour. Then transfer to the refrigerator and chill for at least 2 hours before serving.
