Creamy Zucchini Pasta with Chicken

8 oz (225g) spaghetti or fettuccine pasta

2 medium zucchinis, spiralized or sliced into thin rounds

1 lb (450g) chicken breast, diced into bite-sized pieces

3 tablespoons olive oil, divided

3 cloves garlic, minced

1 cup heavy cream

1 cup shredded Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper, to taste

Fresh basil leaves, for garnish

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the spaghetti or fettuccine and cook according to the package instructions until al dente. Reserve ½ cup of pasta water, then drain and set aside.

    Sauté Chicken: In a large skillet over medium heat, heat 2 tablespoons of olive oil. Season the diced chicken with salt and pepper. Add the chicken to the skillet and cook for 5-7 minutes until browned and cooked through. Remove the chicken from the skillet and set aside.

      Sauté Garlic and Zucchini: In the same skillet, add the remaining tablespoon of olive oil. Add the minced garlic and sauté for about 30 seconds until fragrant. Add the zucchini and cook for 3-4 minutes, just until they start to soften. Season with a pinch of salt and pepper.

        Make the Cream Sauce: Lower the heat and pour in the heavy cream, stirring to combine. Add the Italian seasoning and continue to cook for 2-3 minutes until the sauce is slightly thickened.

          Combine Pasta and Sauce: Add the cooked pasta and chicken back to the skillet. Toss everything together until the pasta is nicely coated in the cream sauce. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

            Add Cheese and Serve: Remove the skillet from heat and stir in the shredded Parmesan cheese until melted and creamy. Taste and adjust seasoning if necessary.

              Plate and Garnish: Serve the creamy zucchini pasta warm, garnished with fresh basil leaves and extra Parmesan cheese if desired.
