8 oz fettuccine or tagliatelle pasta

2 tablespoons olive oil

1 tablespoon unsalted butter

1 medium onion, finely chopped

3 cloves garlic, minced

12 oz mixed wild mushrooms (such as shiitake, cremini, and oyster), sliced

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

½ cup vegetable or chicken broth

1 cup heavy cream

½ cup grated Parmesan cheese

Salt and black pepper to taste

Fresh parsley, chopped, for garnish

Cook the Pasta: Bring a large pot of salted water to a boil. Add the fettuccine or tagliatelle and cook according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain the pasta and set aside.

    Sauté the Aromatics: In a large skillet over medium heat, add the olive oil and butter. Once melted, add the chopped onion and sauté for about 2-3 minutes, until translucent. Stir in the minced garlic and cook for another minute, until fragrant.
