Creamy White Chicken Chili

1 lb boneless, skinless chicken breasts

1 medium onion, diced

3 cloves garlic, minced

2 cans (15 oz each) white beans (such as northern or cannellini), rinsed and drained

1 can (4 oz) diced green chilies

1 cup corn kernels (frozen, fresh, or canned)

4 cups chicken broth

1 cup heavy cream (or a dairy-free alternative)

1 tsp ground cumin

1 tsp smoked paprika

1 tsp chili powder

Salt and pepper, to taste

2 tbsp olive oil

1 cup shredded Monterey Jack cheese (plus more for serving, optional)

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions
 

Sauté the Chicken: In a large pot or Dutch oven, heat olive oil over medium heat. Add the chicken breasts and cook for about 5-7 minutes on each side, until golden brown. Remove the chicken and set aside to cool slightly. Once cooled, shred or chop into bite-sized pieces.

    Cook the Aromatics: In the same pot, add the diced onion and sauté for about 3-4 minutes until translucent. Add minced garlic and cook for an additional 1 minute, stirring frequently to avoid burning.

      Combine Ingredients: Stir in the white beans, diced green chilies, corn, and chicken broth. Bring to a boil, then reduce heat and let simmer for about 15 minutes.

        Add Spices: Stir in ground cumin, smoked paprika, chili powder, and season with salt and pepper to taste.

          Incorporate Chicken and Cream: Add the shredded chicken back to the pot. Pour in the heavy cream and bring the chili back to a gentle simmer. Cook for an additional 5-10 minutes, allowing the flavors to meld together.

            Finish with Cheese: Stir in 1 cup of shredded Monterey Jack cheese, allowing it to melt into the chili. Adjust the seasoning if needed.

              Serve: Ladle the creamy white chicken chili into bowls and garnish with extra cheese, fresh cilantro, and a squeeze of lime juice. Serve with tortilla chips or warm crusty bread on the side.
