2 cans (15 oz each) white beans (cannellini or great northern), rinsed and drained

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

2 carrots, diced

2 celery stalks, diced

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon smoked paprika

4 cups vegetable broth

2 cups fresh spinach, roughly chopped

1 cup heavy cream (or coconut milk for a dairy-free option)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Optional: Grated Parmesan cheese (for serving)

Instructions
 

Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté until the vegetables are tender, about 5-7 minutes.

    Add Garlic and Spices: Stir in the minced garlic, dried thyme, dried rosemary, and smoked paprika. Cook for an additional minute until the garlic is fragrant.

      Combine with Beans and Broth: Add the rinsed white beans and pour in the vegetable broth. Bring the mixture to a boil, then reduce the heat and let it simmer for about 15 minutes.

        Blend the Soup: Using an immersion blender, blend the soup until it's smooth and creamy. If you prefer a chunkier texture, blend only half of the soup or use a regular blender in batches, ensuring to leave some beans intact.

          Stir in Spinach and Cream: Mix in the chopped spinach and heavy cream. Allow it to simmer for another 5 minutes, until the spinach is wilted and the soup is heated through.

            Season and Serve: Season the soup with salt and pepper to taste. Ladle the soup into bowls and garnish with fresh parsley and grated Parmesan cheese, if desired.
