Creamy Thai Peanut Noodles

8 oz rice noodles

1 cup unsweetened coconut milk

1/4 cup peanut butter (smooth or crunchy)

2 tbsp soy sauce

2 tbsp lime juice

1 tbsp brown sugar

1 tbsp sesame oil

2 cloves garlic, minced

1 tsp fresh ginger, grated

1 cup bell peppers, thinly sliced (mixed colors)

1 cup carrots, julienned

1/4 cup green onions, chopped

1/4 cup chopped fresh cilantro (optional)

Crushed peanuts, for topping

Crushed red pepper flakes (optional, for heat)

Instructions
 

Cook the noodles: Bring a large pot of water to a boil. Add the rice noodles and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the sauce: In a medium saucepan over low heat, whisk together the coconut milk, peanut butter, soy sauce, lime juice, brown sugar, sesame oil, minced garlic, and grated ginger until smooth and well combined. Allow the mixture to warm, stirring occasionally, until heated through.

      Sauté the vegetables: In a large skillet or wok over medium-high heat, add a splash of oil. Once hot, add the sliced bell peppers and julienned carrots. Stir-fry for 3-4 minutes until the vegetables are just tender but still vibrant.

        Combine noodles and sauce: Add the cooked rice noodles to the skillet with the sautéed vegetables. Pour the creamy peanut sauce over the top, tossing everything together until the noodles and veggies are well coated in the sauce. If the sauce is too thick, you can add a splash of water to reach your desired consistency.

          Serve: Once everything is heated through, remove from heat. Garnish with chopped green onions, fresh cilantro, crushed peanuts, and red pepper flakes if desired. Serve warm and enjoy!
