2 medium sweet potatoes, peeled and diced

½ cup Greek yogurt

2 tablespoons mayonnaise

1 tablespoon Dijon mustard

1 tablespoon honey or maple syrup

1 teaspoon apple cider vinegar

½ teaspoon smoked paprika

¼ teaspoon salt (to taste)

¼ teaspoon black pepper (to taste)

½ cup celery, chopped

½ cup red onion, finely chopped

½ cup dried cranberries

¼ cup fresh parsley, chopped

¼ cup toasted pecans or walnuts (optional)

Instructions
 

Cook the Sweet Potatoes: In a large pot, bring salted water to a boil. Add the diced sweet potatoes and cook until fork-tender, about 10-15 minutes. Drain and let cool for a few minutes.
