Ingredients

2 cups rolled oats

1 cup creamy sunflower butter

1/2 cup honey or maple syrup (for a vegan option)

1/2 cup almond milk (or any non-dairy milk)

1/2 cup dried cranberries or raisins

1/4 cup chia seeds

1 teaspoon vanilla extract

1/2 teaspoon cinnamon

1/4 teaspoon salt

Optional: 1/4 cup dark chocolate chips or chopped nuts for added crunch

Instructions

Preheat and Prep: Preheat your oven to 350°F (175°C). Line an 8x8 inch baking dish with parchment paper, leaving some overhang for easy removal later.

Mix the Wet Ingredients: In a large mixing bowl, combine the creamy sunflower butter, honey (or maple syrup), almond milk, and vanilla extract. Whisk together until smooth and fully combined.

Combine the Dry Ingredients: In another bowl, combine the rolled oats, chia seeds, cinnamon, and salt. Mix well to ensure the chia seeds and spices are evenly distributed.

Combine Wet and Dry Mixtures: Pour the dry ingredients into the wet mixture. Stir until just combined, ensuring that the oats are fully coated. Gently fold in the dried cranberries (or raisins) and any optional chocolate chips or nuts.

Spread Mixture in Dish: Transfer the mixture to the prepared baking dish. Use a spatula to flatten and spread it evenly. Press down firmly to create a compact layer.

Bake: Bake in the preheated oven for about 20-25 minutes, or until the edges are golden brown. The center may look soft but will firm up as it cools.

Cool and Cut: Let the bars cool in the baking dish for at least 10 minutes. Use the parchment overhang to lift them out onto a cutting board. Allow to cool for an additional 20-30 minutes at room temperature before cutting into squares or bars.

Enjoy or Store: Enjoy your creamy sunflower butter oat bars immediately, or store in an airtight container at room temperature for up to a week, or in the fridge for longer freshness.
