Ingredients

1 pound gnocchi (store-bought or homemade)

1 cup sun-dried tomatoes in oil, drained and chopped

1 cup heavy cream

1 cup fresh spinach leaves, roughly chopped

1 cup freshly grated Parmesan cheese

3 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon dried oregano

Salt and pepper, to taste

Fresh basil leaves, for garnish (optional)

Instructions

Cook the Gnocchi: Bring a large pot of salted water to a boil. Add the gnocchi and cook according to package instructions until they float to the surface (about 2-3 minutes). Once cooked, drain and set aside.

Sauté Garlic and Tomatoes: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it. Add the chopped sun-dried tomatoes and oregano; cook for an additional 2-3 minutes.

Make the Creamy Sauce: Pour in the heavy cream and stir well to combine. Bring the mixture to a gentle simmer. Allow it to simmer for 3-4 minutes, stirring occasionally until the sauce thickens slightly.

Add Spinach and Cheese: Lower the heat and add the fresh spinach to the skillet, stirring until wilted. Gradually stir in the grated Parmesan cheese until melted and creamy. Adjust seasoning with salt and pepper to taste.

Combine with Gnocchi: Gently toss the cooked gnocchi in the creamy tomato mixture, ensuring every piece is well-coated. Cook for another 2-3 minutes until heated through.

Serve: Divide the gnocchi among plates, drizzle with a bit more olive oil if desired, and garnish with fresh basil leaves for an added burst of flavor.
