Creamy Sun-Dried Tomato Alfredo

8 oz fettuccine pasta

2 tablespoons olive oil

4 cloves garlic, minced

1 cup heavy cream

1 cup freshly grated Parmesan cheese

1/2 cup sun-dried tomatoes, chopped (preferably packed in oil)

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

Fresh basil leaves for garnish

Optional: Extra Parmesan for serving

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. Reserve about 1/2 cup of pasta water, then drain and set the pasta aside.

    Sauté Garlic: In a large skillet over medium heat, add olive oil. Once hot, sauté the minced garlic for about 1-2 minutes until fragrant but not browned.

      Make the Alfredo Sauce: Lower the heat to medium-low and add the heavy cream to the skillet. Stir continuously for about 2-3 minutes until warmed.

        Add Cheese & Tomatoes: Gradually whisk in the grated Parmesan cheese until melted and smooth. Then, add in the chopped sun-dried tomatoes and red pepper flakes (if using). Stir to combine, and allow the mixture to thicken for another 2-3 minutes.

          Combine Pasta & Sauce: Add the drained fettuccine to the skillet with the sauce. Toss to coat the pasta evenly, adding a little reserved pasta water if needed for a creamier consistency.

            Season: Taste and season with salt and pepper as needed.

              Serve: Plate the creamy sun-dried tomato Alfredo, garnish with fresh basil leaves, and sprinkle with extra Parmesan cheese if desired. Enjoy warm!
