1 cup polenta (coarse cornmeal)

4 cups vegetable broth (or water)

1 tablespoon olive oil

2 cloves garlic, minced

4 cups fresh spinach, roughly chopped

1 cup heavy cream (or coconut cream for a vegan option)

1/2 cup grated Parmesan cheese (or nutritional yeast for a vegan option)

Salt and pepper to taste

1/4 teaspoon nutmeg

Optional toppings: sliced cherry tomatoes, toasted pine nuts, microgreens

Instructions
 

Cook the Polenta: In a large saucepan, bring the vegetable broth to a boil. Gradually whisk in the polenta and reduce heat to low. Stir constantly for about 5-7 minutes until thickened and creamy. Remove from heat.
