Ingredients

2 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1/2 teaspoon nutmeg

Salt and pepper, to taste

1 package (about 18 oz) store-bought or homemade ravioli (spinach and cheese or plain)

2 tablespoons olive oil

1 cup heavy cream

1/2 cup vegetable or chicken broth

1 tablespoon lemon juice

Fresh basil, for garnish

Instructions

Prepare the Filling: In a mixing bowl, combine the chopped spinach, ricotta cheese, mozzarella cheese, Parmesan cheese, garlic powder, nutmeg, salt, and pepper. Mix until well combined and set aside.

Cook the Ravioli: Bring a large pot of salted water to a boil. Once boiling, add the ravioli and cook according to package instructions until they float to the surface, indicating they are done. Typically, this takes about 3-5 minutes. Drain and set aside.

Make the Sauce: In a large skillet, heat the olive oil over medium heat. Add the heavy cream and broth. Stir and bring to a gentle simmer, allowing it to thicken slightly, about 3-4 minutes.

Add Flavor: Stir in the lemon juice, and season the sauce with additional salt and pepper to taste. If you’d like a hint of garlic, you can add minced garlic or garlic powder at this stage.

Combine Ravioli and Sauce: Gently add the cooked ravioli to the skillet, tossing to coat the pasta evenly in the creamy sauce. Cook for an additional 2-3 minutes to ensure everything is heated through.

Serve: Plate the ravioli and drizzle extra sauce on top. Garnish with fresh basil and a sprinkle of Parmesan cheese if desired.

Enjoy: Serve immediately while hot for a delightful and creamy meal!
