Creamy Spinach Artichoke Pasta

8 oz pasta (linguine or penne)

1 cup frozen spinach, thawed and drained

1 can (14 oz) artichoke hearts, drained and chopped

1 cup heavy cream

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

3 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon lemon juice

Salt and pepper, to taste

Red pepper flakes (optional, for heat)

Fresh basil or parsley, for garnish

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the pasta according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water.

    Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

      Prepare the Sauce: Lower the heat and add the heavy cream to the skillet. Stir it gently, then add the mozzarella and Parmesan cheese. Allow the cheese to melt completely, stirring frequently.

        Add Spinach and Artichokes: Once the cheese is melted and the sauce is smooth, add the thawed spinach and chopped artichoke hearts. Mix well and let it simmer for about 2–3 minutes. If the sauce is too thick, add some reserved pasta water, a little at a time, until you reach the desired consistency.

          Season: Stir in the lemon juice, and season with salt, pepper, and red pepper flakes (if using) to taste.

            Combine Pasta and Sauce: Add the cooked pasta to the sauce, tossing it gently to coat the pasta evenly with the creamy mixture. Allow it to heat through for another 2–3 minutes.

              Serve: Remove from heat, garnish with fresh basil or parsley, and serve warm with extra grated Parmesan on top if desired.
