8 oz fettuccine pasta

1 lb large shrimp, peeled and deveined

2 tbsp olive oil

3 cloves garlic, minced

1 cup heavy cream

1/2 cup chicken broth

1 cup grated Parmesan cheese

1 cup cherry tomatoes, halved

2 cups fresh spinach

1 tsp Italian seasoning

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Zest of 1 lemon

Juice of 1/2 lemon

Cook the Fettuccine: In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of the pasta water.

    Sauté the Shrimp: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Add the shrimp, season with salt, pepper, and Italian seasoning. Cook until the shrimp turns pink and opaque, about 3-4 minutes. Remove the shrimp from the skillet and set aside.

      Prepare the Cream Sauce: In the same skillet, pour in the chicken broth and heavy cream, stirring to combine. Bring to a gentle simmer and cook for about 2-3 minutes until the sauce begins to thicken.

        Add Cheese and Vegetables: Stir in the grated Parmesan cheese, cherry tomatoes, and fresh spinach. Cook until the spinach wilts and tomatoes soften, about 2-3 minutes. If the sauce is too thick, add a splash of the reserved pasta water to achieve desired consistency.

          Combine Everything: Return the cooked shrimp to the skillet with the cream sauce. Add the fettuccine and toss everything together gently, making sure the pasta is well coated.

            Finish with Lemon: Add the lemon zest and the juice of half a lemon to the pasta. Toss again to combine, adjusting seasoning with more salt and pepper if needed.

              Serve: Garnish with chopped fresh parsley. Serve immediately, with extra Parmesan cheese on the side if desired.
