Creamy Sausage Rigatoni

12 oz rigatoni pasta

1 lb Italian sausage (mild or spicy, based on preference)

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1 cup grated Parmesan cheese

1 cup spinach leaves, packed

1 tsp dried oregano

1 tsp red pepper flakes (optional)

Salt and pepper to taste

2 tbsp olive oil

Fresh basil or parsley for garnish

Cook the Pasta: In a large pot of boiling salted water, cook the rigatoni according to package instructions until al dente. Reserve ½ cup of pasta water, then drain and set aside.

    Sauté the Sausage: In a large skillet, heat the olive oil over medium heat. Remove the sausage from its casings and add it to the skillet. Cook for about 5-7 minutes, breaking it up with a spatula, until it's browned and fully cooked. Remove sausage from the skillet and set aside.

      Sauté Aromatics: In the same skillet, add the chopped onion and cook for 3-4 minutes until translucent. Add the minced garlic and cook for an additional 1-2 minutes, stirring frequently to avoid burning.

        Create the Sauce: Pour in the chicken broth and bring to a simmer. Reduce heat to low and stir in the heavy cream. Allow the mixture to simmer for about 5 minutes, thickening slightly.

          Combine Ingredients: Add the cooked sausage back into the sauce along with the oregano, red pepper flakes (if using), and season with salt and pepper. Stir in the grated Parmesan cheese until melted and creamy.

            Add the Pasta: Stir in the cooked rigatoni and spinach leaves. If the sauce is too thick, gradually add reserved pasta water until the desired creaminess is achieved.

              Serve: Divide the creamy sausage rigatoni into bowls, garnish with fresh basil or parsley, and additional Parmesan if desired.
