Creamy Roasted Tomato Soup

2 lbs ripe tomatoes, halved

1 medium onion, chopped

4 cloves garlic, unpeeled

2 tablespoons olive oil

1 teaspoon salt

½ teaspoon freshly ground black pepper

1 teaspoon dried basil

1 teaspoon sugar (optional, to balance acidity)

2 cups vegetable broth

½ cup heavy cream (or coconut cream for a vegan option)

Fresh basil leaves, for garnish

Crusty bread, for serving

Instructions
 

Prepare the Tomatoes: Preheat your oven to 400°F (200°C). On a large baking sheet, place the halved tomatoes, chopped onion, and unpeeled garlic cloves. Drizzle with olive oil, salt, pepper, and dried basil. Toss everything to coat evenly.

    Roast: Spread the mixture in a single layer and roast in the preheated oven for about 30-35 minutes, or until the tomatoes are caramelized and soft.

      Cool and Peel: Once done, let the roasted mixture cool for about 10 minutes. Afterward, squeeze the roasted garlic out of its skins into a blender along with the roasted tomatoes and onions. If desired, add sugar to balance the acidity.

        Blend: Pour the vegetable broth into the blender, then blend until smooth. (You may need to do this in batches depending on the size of your blender.)

          Heat the Soup: Transfer the blended soup to a saucepan and heat over medium heat. Once it’s warm, stir in the heavy cream and adjust seasonings to taste.

            Serve: Ladle the soup into bowls, garnish with fresh basil leaves and a drizzle of olive oil. Serve with crusty bread alongside for dipping.
