Creamy Roasted Tomato & Garlic Pull-Apart Pasta

1 pound (450g) of fresh pasta (fettuccine or pappardelle work best)

2 cups cherry tomatoes, halved

1 whole bulb of garlic

1 tablespoon olive oil

1 teaspoon dried Italian herbs (oregano, basil, thyme)

Salt and pepper to taste

1 cup heavy cream

1 cup grated Parmesan cheese

1 tablespoon lemon juice

Fresh basil leaves, for garnish

Extra Parmesan cheese, for serving

Instructions
 

Roast the Tomatoes and Garlic: Preheat your oven to 400°F (200°C). Place the halved cherry tomatoes and the whole bulb of garlic (with the top sliced off to expose the cloves) on a baking sheet. Drizzle with olive oil, sprinkle with Italian herbs, salt, and pepper. Roast in the oven for about 20-25 minutes, until the tomatoes are soft and caramelized, and the garlic cloves are golden and fragrant.

    Cook the Pasta: While the tomatoes and garlic are roasting, bring a large pot of salted water to a boil. Add the fresh pasta and cook according to package instructions until al dente. Drain and set aside, reserving 1 cup of pasta water.

      Make the Creamy Sauce: Once the tomatoes and garlic are done roasting, remove them from the oven. Squeeze the roasted garlic cloves out of their skins into a large mixing bowl. Add the roasted tomatoes to the bowl, along with the heavy cream, lemon juice, and half of the grated Parmesan cheese. Use a fork or potato masher to blend everything together until smooth and creamy. If the sauce is too thick, gradually mix in some reserved pasta water until the desired consistency is reached.

        Combine Pasta and Sauce: Add the cooked pasta to the creamy sauce, tossing gently until the pasta is well coated. Taste and adjust seasoning with more salt, pepper, or lemon juice if desired.

          Serve: Carefully pull apart portions of the creamy pasta into serving bowls. Garnish with fresh basil leaves and a sprinkle of extra Parmesan cheese. Serve immediately while warm and enjoy!
