8 oz spaghetti

2 large red bell peppers

1 tablespoon olive oil

1 small onion, diced

3 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1 cup ricotta cheese

1 teaspoon Italian seasoning

Salt and pepper, to taste

1 cup shredded mozzarella cheese

Fresh basil leaves, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Roast the Peppers: Place the red bell peppers on a baking sheet and roast in the oven for about 25-30 minutes, or until the skin is charred and blistered. Remove from the oven, place in a bowl, cover with plastic wrap, and let steam for about 10 minutes. Once cool, peel the skin off, remove seeds, and chop the peppers.

      Cook the Spaghetti: While the peppers are roasting, cook the spaghetti according to package instructions until al dente. Drain and set aside.

        Prepare the Cream Sauce: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Add minced garlic and sauté for an additional minute.

          Blend the Roasted Peppers: In a blender, combine the roasted red peppers, sautéed onion and garlic, heavy cream, Parmesan cheese, ricotta cheese, Italian seasoning, salt, and pepper. Blend until smooth and creamy.

            Combine: In a large mixing bowl, combine the cooked spaghetti with the creamy red pepper sauce. Stir until the pasta is well coated.

              Assemble the Bake: Transfer the spaghetti mixture to a greased 9x13 inch baking dish. Sprinkle shredded mozzarella cheese evenly over the top.

                Bake: Bake in the preheated oven for about 25-30 minutes, or until the cheese is bubbly and golden brown on top.
