Creamy Roasted Pepper Gnocchi

1 pound gnocchi (store-bought or homemade)

2 large red bell peppers

1 cup heavy cream

1/2 cup grated Parmesan cheese

2 cloves garlic, minced

1 tablespoon olive oil

Salt and pepper, to taste

Fresh basil, for garnish

Crushed red pepper flakes, optional

Roast the Peppers: Preheat your oven to 450°F (230°C). Place the whole red bell peppers on a baking sheet lined with parchment paper. Roast them for about 20-25 minutes, turning occasionally, until the skins are charred and blistered. Remove from the oven, cover with aluminum foil, and let steam for 10 minutes. Peel off the skins, remove the seeds, and chop the peppers into small pieces.

    Cook the Gnocchi: In a large pot of salted boiling water, add the gnocchi. Cook according to the package instructions (usually about 2-3 minutes or until they rise to the surface). Once cooked, drain and set aside.

      Make the Cream Sauce: In a large skillet over medium heat, add the olive oil and minced garlic. Sauté for about 1-2 minutes, or until fragrant and lightly golden.

        Combine Ingredients: Add the roasted peppers to the skillet and sauté for another 2-3 minutes. Pour in the heavy cream and stir to combine. Bring to a simmer and add the grated Parmesan cheese. Stir until the cheese has melted and the sauce is creamy. Season with salt and pepper to taste.

          Add Gnocchi to the Sauce: Gently fold the cooked gnocchi into the creamy roasted pepper sauce, ensuring each piece is coated. Allow it to simmer for an additional 2-3 minutes so the gnocchi can absorb some of the flavors.
