2 large heads of garlic

1 cup cream cheese, softened

¼ cup Greek yogurt

2 tablespoons olive oil

1 tablespoon fresh lemon juice

1 teaspoon dried thyme

1 teaspoon dried rosemary

½ teaspoon sea salt (adjust to taste)

¼ teaspoon black pepper

Fresh parsley, finely chopped (for garnish, optional)

Roast the Garlic: Preheat your oven to 400°F (200°C). Slice the top off each head of garlic to expose the cloves. Drizzle olive oil over the exposed cloves, wrap each head loosely in aluminum foil, and place directly on the oven rack. Roast for 30-35 minutes or until the cloves are golden and tender. Let cool slightly.

    Prepare the Spread: Once the garlic is cool enough to handle, squeeze the roasted cloves into a mixing bowl. Use a fork or a potato masher to mash the garlic until it forms a chunky paste.

      Mix Ingredients: To the mashed garlic, add the softened cream cheese, Greek yogurt, olive oil (add more if desired for consistency), lemon juice, thyme, rosemary, salt, and black pepper. Using a hand mixer or spatula, blend all the ingredients together until creamy and well combined. Make sure there are no large chunks of garlic left.
