8 ounces pasta of choice (penne or fusilli work well)

1 can (15 ounces) chickpeas, drained and rinsed

1 cup fresh basil leaves

1/4 cup pine nuts (or walnuts)

1/4 cup grated Parmesan cheese (or nutritional yeast for a vegan option)

2 cloves garlic, minced

1/3 cup extra virgin olive oil

Juice of 1 lemon

Salt and pepper to taste

1 cup heavy cream (or coconut cream for a dairy-free version)

Cherry tomatoes, halved (for garnish)

Fresh basil leaves (for garnish)

Optional: Red pepper flakes for heat

Instructions
 

Cook the Pasta:

    - Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

      Make the Pesto:

        - In a food processor, combine basil, pine nuts, Parmesan cheese, minced garlic, lemon juice, salt, and pepper. Pulse until finely chopped.

          - While the motor is running, slowly drizzle in the olive oil until the mixture is smooth and creamy. You may need to scrape down the sides a few times. Taste and adjust seasoning if necessary.

            Combine Chickpeas and Pesto:

              - In a large skillet over medium heat, add the rinsed chickpeas and sauté for about 5 minutes until heated through and slightly golden. Add the prepared pesto to the skillet and stir to coat the chickpeas.

                Create the Creamy Sauce:

                  - Reduce the heat to low and stir in the heavy cream (or coconut cream). Mix well until the cream is warmed through and integrates into the pesto. If the sauce is too thick, add reserved pasta water, a little at a time, to reach the desired consistency.

                    Combine with Pasta:
