8 oz. fettuccine or pasta of your choice

2 chicken breasts, diced

2 tablespoons olive oil

1 teaspoon garlic powder

Salt and pepper, to taste

1 cup heavy cream

1/2 cup basil pesto (store-bought or homemade)

1/2 cup grated Parmesan cheese

1 cup cherry tomatoes, halved

Fresh basil leaves, for garnish

Additional Parmesan cheese, for serving

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the fettuccine according to package instructions until al dente. Drain and set aside, reserving a little pasta water.

    Cook the Chicken: In a large skillet over medium heat, add the olive oil. Once hot, add the diced chicken and season with garlic powder, salt, and pepper. Cook for about 6-8 minutes, or until the chicken is cooked through and golden brown. Remove the chicken from the skillet and set aside.

      Prepare the Sauce: In the same skillet, reduce the heat to low and pour in the heavy cream. Allow to simmer gently for about 2 minutes. Stir in the basil pesto and Parmesan cheese until well combined.

        Combine Ingredients: Add the cooked pasta and chicken to the skillet, tossing everything together. If the sauce is too thick, add a splash of the reserved pasta water until you reach your desired consistency. Fold in the cherry tomatoes gently.

          Serve: Distribute the creamy pesto chicken pasta among serving plates. Garnish with fresh basil leaves and additional Parmesan cheese if desired. Enjoy!
