2 large ripe peaches, pitted and diced

1 cup plain Greek yogurt (or your favorite yogurt)

1/2 cup coconut milk (or milk of choice)

1/4 cup honey or maple syrup (adjust based on sweetness preference)

1 teaspoon vanilla extract

1 tablespoon lemon juice

A pinch of salt

Optional: Chopped mint for garnish

Prepare the Peaches: Begin by washing the peaches thoroughly. Slice them in half, remove the pits, and dice them into small pieces. If desired, you can also blend half of the peaches into a puree for a smoother consistency.

    Mix the Base: In a mixing bowl, combine the Greek yogurt, coconut milk, honey (or maple syrup), vanilla extract, lemon juice, and a pinch of salt. Whisk until the mixture is smooth and well combined.

      Incorporate the Peaches: Gently fold in both diced and pureed peaches (if using). This will add texture and a burst of peach flavor throughout your popsicles.

        Pour into Molds: Carefully pour the peach yogurt mixture into popsicle molds, leaving a little space at the top as they will expand when frozen. If you like, add extra diced peaches into each mold for added texture.
