2 ripe peaches, diced

2 cups cherry tomatoes, halved (mix of red and yellow for color)

1 small red onion, thinly sliced

1 cup fresh mozzarella balls (bocconcini), drained

¼ cup fresh basil leaves, roughly chopped

½ cup Greek yogurt

2 tablespoons olive oil

1 tablespoon balsamic vinegar

Salt and pepper, to taste

Zest and juice of 1 lemon

Prepare the Vegetables and Fruits: In a large mixing bowl, gently combine the diced peaches, halved cherry tomatoes, and thinly sliced red onion.
