Ingredients

1 cup orzo pasta

2 cups vegetable broth

1 cup heavy cream

1 cup grated Parmesan cheese

1 cup fresh or frozen peas

2 tablespoons olive oil

2 cloves garlic, minced

1 small onion, finely chopped

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Zest of 1 lemon (optional)

1/4 teaspoon red pepper flakes (optional)

Instructions

Cook the Orzo: In a medium saucepan, bring the vegetable broth to a boil. Add the orzo and cook according to package instructions until al dente, usually about 8-10 minutes. Stir occasionally to prevent sticking. Once cooked, drain excess liquid if necessary and set aside.

Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the finely chopped onion and sauté until translucent, about 5 minutes. Then, add the minced garlic and cook for an additional 1-2 minutes until fragrant.

Combine Cream and Cheese: Reduce heat to low and carefully stir in the heavy cream. Allow it to simmer gently for about 2 minutes. Gradually whisk in the grated Parmesan cheese until it melts and the sauce becomes smooth and creamy.

Add Peas and Orzo: Stir in the peas, cooked orzo, salt, and pepper to taste. If you like a bit of heat, add the red pepper flakes at this stage as well. Mix until the orzo is well coated with the creamy sauce.

Adjust Consistency: If the mixture is too thick, you can add a splash of vegetable broth or water to reach your desired consistency.

Serve and Garnish: Remove from heat and stir in the lemon zest for added brightness if desired. Plate the creamy orzo and garnish with chopped fresh parsley.

Enjoy: Serve warm and enjoy this delightful creamy Parmesan orzo loaded with peas, perfect for a comforting meal or as a side dish!
