1 lb large shrimp, peeled and deveined

2 cups fresh or frozen sweet corn

1 medium onion, finely chopped

2 cloves garlic, minced

1 bell pepper (red or green), diced

1 stalk celery, diced

2 cups low-sodium chicken or seafood stock

1 cup heavy cream

1 tbsp tomato paste

2 tbsp olive oil

1 tsp Cajun seasoning

1/2 tsp smoked paprika

Salt and pepper to taste

2 green onions, sliced (for garnish)

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Sauté Vegetables: In a large pot, heat the olive oil over medium heat. Add the chopped onion, bell pepper, and celery. Sauté for about 5-7 minutes or until softened. Stir in the minced garlic and cook for 1 more minute until fragrant.

    Add Corn and Spices: Add the corn, Cajun seasoning, smoked paprika, and tomato paste to the pot. Stir well to combine and cook for another 2-3 minutes to let the spices toast.

      Pour in Stock: Pour the chicken or seafood stock into the pot. Bring the mixture to a simmer and let it cook for about 15 minutes, allowing the flavors to meld.

        Blend the Bisque: Using an immersion blender, carefully blend the mixture until smooth. If you prefer a chunkier texture, blend only half the bisque and leave the rest as is.

          Add Cream and Shrimp: Reduce the heat to low. Add the heavy cream and the shrimp to the pot, cooking for an additional 5-7 minutes, or until the shrimp are pink and cooked through. Taste and adjust seasoning with salt and pepper, if needed.

            Garnish and Serve: Ladle the bisque into bowls, garnishing with sliced green onions and chopped parsley. Serve with lemon wedges on the side for a fresh squeeze of juice just before enjoying.
