Creamy Mushroom Garlic Pasta

12 oz (340g) fettuccine or linguine pasta

2 cups (about 200g) cremini or button mushrooms, sliced

4 cloves garlic, minced

1 medium onion, finely chopped

1 cup (240ml) heavy cream

1 cup (100g) grated Parmesan cheese

2 tablespoons olive oil

1 tablespoon unsalted butter

Salt and black pepper to taste

Fresh parsley, chopped (for garnish)

Red pepper flakes (optional, for heat)

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package directions until al dente. Reserve about 1 cup of pasta water, then drain the pasta and set aside.

    Sauté the Vegetables: In a large skillet over medium heat, heat the olive oil and butter. Add the chopped onion and garlic; sauté for about 2-3 minutes, until fragrant and translucent.

      Add the Mushrooms: Stir in the sliced mushrooms and cook for an additional 5-7 minutes until they are browned and tender. Season with salt, pepper, and red pepper flakes if using.
